A Rather Indulgent National Cheesecake Day

I work in one of those offices where when it is your birthday you are expected to take in cakes. As I was on holiday for my actual birthday last week I decided to wait until today and make cheesecakes to celebrate national cheesecake day… Who doesn’t love cheesecake?? Both cheesecakes I made went down extremely well. As I am on a bit of a healthy eating drive at the moment I think they expected something super healthy, but I couldn’t do that to them so I made one super indulgent cheesecake and one slightly healthier, this is the indulgent one.

No Bake Triple Chocolate Oreo Cheesecake 

400g crushed milk chocolate digestive biscuits
150g melted butter
720 g cream cheese
200g icing sugar
450g milk chocolate
300g Oreo cookies, broken into quarters

Mix the crushed digestives and butter together until well combined. Spoon the biscuit mixture into a 20cm springform tin, spreading evenly and firmly. Chill in the fridge until the cheesecake mixture is ready.

Mix the cream cheese and icing sugar together in a bowl, this works well in an electric mixer if you have one but can be done by hand.

Meanwhile melt 400g of the chocolate in a heatproof bowl set over a pan of simmering water, making sure the bottom of the bowl does not touch the water.

Place a large dollop of the cream cheese mixture into the bowl of remaining chocolate and stir until well combined. Keep adding the mixture, one dollop at a time, and mixing it vigorously until the chocolate mixture becomes smooth and silky and you have added all of the cream cheese.

Mix in half of the broken Oreos.

Spread the soft cheese and chocolate mixture evenly over the biscuit base.

Scatter with the remaining oreos, pushing some into the chocolate cheese mixture.

Melt the remaining chocolate in heatproof bowl set over a pan of simmering water. Drizzle this chocolate over the cheesecake.

Chill the cheesecake for at least two hours, if possible over night.
