A Rather Indulgent National Cheesecake Day

I work in one of those offices where when it is your birthday you are expected to take in cakes. As I was on holiday for my actual birthday last week I decided to wait until today and make cheesecakes to celebrate national cheesecake day… Who doesn’t love cheesecake?? So after a lovely, rather over indulgent birthday week off work and few days in Cornwall it is sadly back to reality. After all the eating last week it is time to get my diet back in check, so I am trying to stick to really quick, wholesome meals. Strawberry Picking Season!

There is nothing better than fresh British strawberries at the height of the season, especially when you have picked them yourself. I love them just as they are; my other half likes to spoil them with a sprinkling of sugar and cream. The weather this morning wasn’t great but as soon as the sun came out I knew I wanted a trip to Clive’s Fruit Farm, so we could pick some strawberries, even though I was covered in paint after a morning of decorating. Overnight Chia Pudding Breakfast

So far this year I have become a little obsessed with chia seeds, they are a great source of nutrients. I regularly add them to smoothies and recently started making chia puddings. I struggle with breakfast as I don’t like milk and I don’t like toast so everyday simple breakfast options aren’t really for me. I tend to have a smoothie every morning but now and again I like to add a bit of variety and have chia pudding instead. So it has been the hottest day for nine years, unfortunately I have been stuck at work in a boiling hot office all day.
